Carbon 210mm Gyuto under $150.

I was at a Japanese friend's house and she had several non-stainless steel knives that I loved using. I want something that will stay sharp and I can sharpen (I think I know how) I am looking at a 210mm gyuto type and maybe another smaller knife to try. Price range for each 50-150. My thought is to try a less expensive version of these type of knives and use them. Then I will know more and will upgrade later. So:

carbon steel or anything other than stainless.
210 gyuto and a smaller "paring type knife"
wa handle
I prefer a lighter knife than most people

I welcome any other suggestions.

Hi Sharman,

There are several good choices for you in that price range.

I love this knife. We just got them and it's well within your price range. It's made with high quality carbon steel called Hitachi White #1 and it's thin, hard and has a nice shape. You can get this knife really sharp and it will hold it's edge.

If you want a step up this Goko is really good, hand made and has the same steel but it's clad in stainless so you get the benefit of a good carbon steel edge with the convenience of a stainless blade:

d handles on those goko gyutos.

great price on those though. looks to be a bang for the buck kind of knife.

lest you forget your other knife lines such as:

tanaka damascus wa gyuto clad in stainless, blue core steel


tojiro hand hammered, sk5 carbon with a d handle, no stock on the 210mm though, but 240 is in stock


recently got a hand hammered textured petty and it's awesome at cutting without having stuff sticking too much to the side. gotta say, i'm a fan of the texture and the unexpected effect of the hand hammered look.

The Tanaka is all carbon steel, no stainless in it, but my 240mm is my favorite knife out of any that I own!
