Yes, I've got this recipe down, fall off the bone tenderness every time. The last hour of cooking I'll rotate each rib around so that each side gets a chance to crisp up a bit. When I do this I sprinkle a little course salt on that side before it goes back in the oven. Best beef flavor that I can produce. The risotto was something new for me, I liked that as a starch over potatoes.

Awesome! I agree about the rice.
One of my kids favorite dishes that I make is beef stew. I always braise it low and slow in the oven vs. on the stove top. We have it without potato, served over steamed jasmine rice about 90% of the time. Every now and then for a change a nice batch of mashers gets made with plenty of butter and cream to have with it but the rice is for sure the fave around here. My oldest has been moved out from the house for a few years now and if I want to see her all I have to do is mention we are having stew for dinner and she shows up, it's like magic.

Very nice! I've braised short ribs the last 2 weekends. 1st weekend was over mashed with plenty of butter, sour cream and chives. Last week it was over jasmine rice. Both times i've used the braising liquid as sauce and still have some left from saturday. I may try it over pasta tomorrow...
