If I am considering these 3 steels for my new knife purchase. Less reactivity is an important consideration.
Irrelevant of all the other factors and assuming that these knives are exactly the same in all the other factors except the material…
What would be your choice and why?
Is it blue steel because it easier to sharpen and holds a steep sharp edge?
Is it HAP 40 because of extremely high HRC and long edge retention?
Or perhaps SRS15 thinned out as in-between choice?

I have found my HAP40 to not be very reactive at all.
