Blue steel gyuto and petty

Do you have any idea when the Konosuke Fujiyama Gyoto 240mm will be back in stock?

I also want to get the 150mm petty.

If these knives won’t be back in stock in the foreseeable future, is there anything else similar that you have in stock? Preferably blue steel. When it comes to the Gyoto I’m looking for a laser similar to or better than the Konosuke.

Hi Daniel,

They're on order but I never know when they will ship them to me. My guess is we'll get more in the next month.

If you want something soon we have a number of choices that use Hitachi blue 1, 2 and Hitachi blue super.

If you have your gyuto in carbon steel, have the petty in stainless or semi-stainless. You may use it for acidic stuff like some fruit, and save your carbon edge. And it's much more fun to experience different steel types.
