This is probably a stupid question but what are the black part of the knife blade many japanese carbon knife have?

The dark part of the blade is what is referred to as a kurouchi finish. The CKTG site defines this as: "a black carbonized finish put on knives to protect the steel and provide a barrier on carbon steel knives." It is often protected with a laquer coating but will wear off over time. The finish has been ground off towards the edge as the knife has been shaped, but remains on the upper portion of the knife above the bevels.

Yep, Thats a Kurouchi. They can be laquer coating or more baked on, As has been presented, they help protect the carbon steel on some knives from oxidation. They can be removed, and may wear away on their own under regular maintenance.
