I just got the Artifex Fujiwara collaboration knife...I haven't used it to cut anything as of yet...(waiting for new job to start)...got it just as a basic knife to replace a Victorinox 10" that I use for Culinary school and has become pretty beat up even though its still sharp as heck...The only test I did was OOTB sharpness and it flew threw newspaper...I think this would be a great starter knife for you...it is also very light I think that has to do with the Funyaki profile and the WA handle....all around nice knife and you wont be disappointed the fit and finish is nice as well nothing out of the ordinary that I noticed nice price point as well how are you going to be 80 beans for this?
