Best 240 MM Gyuto for under $250-$275?

Sun Dec 02, 2012 9:56 pm

Looking to potentially buy a new Gyuto soon. I like the 240 MM size and currently have a stainless Masahiro. Potentially looking at a laser, wa handled knife and been reading a ton about the Konosuke White #2s and HDs.

Are these going to be my best bet in this price range?

They're really good knives. You'll like it a lot if you're ok with carbon steel or semi stainless in the case of the HD.

Is there anything you'd recommend over these two in that price range?

NICK <> The Kono HD2 is worth the extra $30 over the #2. I have 3 Konosukes in my kit & 2 more on order because the damn knife just does everything so well. They're really a joy to use...

I moved from Shun and Henkel to a Konosuke HD. It was worth every penny. It took me a little bit to get used to such a light knife, after using much heavier knives, but now it feels like an extension of my arm. I touch mine up on a rod every once in a while and have actually sharpened it once in the 2 months I have had it. It hold a great edge. Would recommend the knife to anyone.

Better than those two in that price range....IMHO no.

Different....yes....but not better. It would kind of depend on what you wanted though. Both will be very thin, great cutters with great steel.

What about the Richmond Laser? AEB-L, Wa handle?

Guess now I'll have to decide between the #2 or the HD. I don't have a carbon knife so maybe this would be a good first one. Then again the HD series is probably less hassle. Ahh...

NICK <> Tim did raise the Richmond Laser into the fray here. I have never used one, but the AEB-L is really awesome. http://www.chefknivestogo.com/laser.html

Regarding the HD: they call it semi-stainless, but it acts basically like stainless. It does require less attention then white steel.
