Yeah, it tapers down to nothing. No taper under the handle like an old Sab but I don't notice it. The shallots we get at work are the gassed/bleached whatever you get in large quanities and are hard as a rock and the outer layer defies a lot of edges. This one chows down. This is the longest my laser has sat unused. It is kind of scary.

I need to try carrots again. I used it when the edge was fresh from the box on carrots and I hated it. I used it the next night at work and it did everything fine. I am wondering if it had a wire edge from the factory or something making it get caught up or not be as sharp as it could be. It worked great after that initial use.
I sharpened it after I did the mustard patina so I will give carrots a go tomorrow. I have the day off.

I cut some of the big carrots at work into obliques without a problem.
