I just ordered the Richmond Artifes Santoku. I assume it is beveled 15 degrees on both sides, but i wondered if it has a double bevel, and what the angle of the other bevel is.

Usually the term double bevel means the knife edge is ground on both sides. The santoku you bought is ground this way more or less evenly on both sides. I instruct the factory to do the edges at about 15 degrees but they're done by hand on a belt sander so they can vary a little from knife to knife and from operator to operator. Also, it's common to have a little more ground on the last side that is sharpened but these are tiny differences.
