Anyone try out the scimatar? I though about getting one for my son. He makes sausage and butchers mostly primal
cuts plus the occasional feral hog or deer that peopel give him(he lives in Austin,TX). Wish it were a LITTLE

Everyone,no matter were they fit in the food prep chain need a big knife and a little knife. You've already sold them the big knife so no it's time for the little one.

It's in the works. I'm guessing we'll have the 150 petty, 180mm Nakiri and the 160 honesukis in the next 10-30 days. Nakiris should be first up in the next week. 270mm Sujis will be coming too.

The logo on these is etched now, and not lasered?
If so, I like that a lot. This is a great line of knives, Mark.

Your bread knife is only sharpened on one side, right? The back side is flat?

Yes the bread knife serrations are flat on the back side. They're a little pointier than the Tojiro. Handle is a little smaller than the Tojiro and comfortable. They're using a colored laser to do the logo. It's a really cool process and that's why it has a white look to them. They came out great.
