or maybe the handle on the 150mm petty is a little too big. looks like you are trying to keep the handle size consistent. but it will may smaller knives way handle heavy.

for the nakiri, I hope I can convince you to do a larger nakiri instead, say 180*55. It would be a lot more versatile and much better balanced with a western handle.

anyway, I am looking forward to the nakiri, petty, and possibly the honesuki. any news on ETA?

The " guard" on filet knives is to help anchor the thin and narrow blade....it would snap easier without it. I say keep it.

Agreed on a filet knife, but I still think it best off on the boning knife.

Yeah, but the finger guards on those knives make them very difficult to sharpen on stones, unless they didn't start the grind until the blade was flat and not curved. Or put the guard on the handle portion and then have the blade start.

I'd still like to see the fillet knife a touch wider; depending on the thickness and grind, it may leave the edge a tad on the thick side or a steeper angle on the main grind.

Agreed anything to avoid a guard. None of the Forschners have a guard and I'm certain they aren't made of any super steel etc.
