Artifex Custom vs New West

First wanted to mention I've been making good use of the new stones I've purchased for myEdge Pro from Chef Knives To Go. Looking forward to a 5000 glass. I've been given a knife to restore. Practically brand new but clearly very poorly treated New West 8 in Gyuto 2.0. Blades been pretty banged up. I'm tempted to recommend having the customer return the knife to manufacturer rather than accept responsibility. Customer asked my opinion for more similar knives. I recommended the Richmond Artifex as a replacement . Both powder steel, similar construction , and Artifex is almost half the price, even with an upgraded handle. Is my comparison reasonable in terms of hardness and performance ? I've been given permission to order a second knife for the customer with their promise not allow other people to use and abse either knife. I've provided them with a forshner to share. Would you say the Artifex would be a close replacement?

Hi Mike,

Yes I do think my custom Artifex is a good alternative to the New West. They're both made in the same factory and my custom handles are done by Tim Johnson who does gorgeous work. We sell the Artifex gyutos in AEB-L and M390 steel. Both are excellent steels.

Have you used them both? Does the powdered steel hold an edge significantly longer?

Can you describe some basic performance differences between Aeb-l and 390? Edge holding, ease of sharpening? Are either of these steels US made? I can order after I answer these questions for the customer. Thanks

AEB-L is definitely easier to sharpen.

AEB-L is Swedish

M390 is Swedish as well I believe

M390 should have better edge retention, but I've not used it enough to verify that.

AEB-L will take a finer edge, but you've got to have the equipment (high grit stones and the skill to use them) to know this.
