Artifex AEB-L or M390

Dear Sir or Madam,

I had a quick question about your Richmond Artifex knives. I am looking to get a 210mm version shortly and was wondering about the regular version vs. the M390 steel model. My main question was about sharpening. I am a homecook so it is not getting the workout of a pro kitchen, and my only 'sharpening' devices are a ceramic hone and a borcilite (?) glass rod. As such, which of the versions will hold an edge better and is it really something I would notice as a homecook?

Hi Jon,

M390 will hold it's edge longer but AEB-L will respond really well to your ceramic rod. My vote is for the AEB-L.

Yeah, AEB-L....M390 is awful wear resistant to be using just a ceramic rod on.

AEB-L and a cheap Idahone ceramic hone will keep a very nice edge for a very long time when used properly. AEB-L responds to stropping and steeling very well; much like some carbon steels.

I would go for the AEB-L; the M390 will hold an edge longer, but it won't be as easy to touch up with the gear you have.

For greatest knife steel today? The thread is a different topic, but the answer is relevant to the question at hand. Don't marginalize me into partisanship! :D :D
