Artifex 240?

I see you got the 210's in stock, any idea when the 240's are coming in?

OK, I'll get the 210's now and then order the 240's when they come in. Got some sweet Sycamore Burl to use on them :)

Yes a nakiri is on the list. I'm getting a half ton of AEB-L later this summer so when that comes in a nakiri and a scimitar are going to happen.

half ton is awesome! can you or others comment a bit on how AEB-L compare to other stainless or semi-stainless steels on performance (properly heat treated, of course)?

my take is Molybdenum<VG10<AEB-L~=swedish~=CPM154<TKC/CN<HD. is it anywhere close?

I believe that treated properly AEB-L behaves like say a 52100 only stainless.

That's funny. I never thought of it in equation form.

I agree with the first part of the eqation:
Molybdenum<VG10<AEB-L

I'll have to think about the rest of it. :)

This link (from the DT website) provides a pretty nice look at AEB-L and a few other types of steel (CPM-154, 440C, and VG-10). The photomicrographs are pretty compelling in favor of AEB-L:

I think the basic progression that Mark wrote out is pretty well agreed-upon. Beyond that, I feel like it's hard to rank some of those others; from what I've read, CPM-154 is a bear to sharpen, but is otherwise amazing, so I'm not sure it will fall in the same place on the list for every person--for instance, somebody good at sharpening might rank it differently than someone who isn't.

Anyhow, in the stainless realm, I'm waiting on a 240mm Artifex or an AEB-L Addict. Unless I get impatient and decide to pick up a 210 Artifex in the meantime.

AEB-L takes the finest edge, and responds the best to stropping. CPM-154 is more wear resistant, harder to sharpen, but the edge generally lasts longer. They both take a very steep edge. Neither suffer from micro-chipping, even at 10 degrees. If I were new to sharpening, I'd go for AEB-L. A more experience sharpener can benefit from CPM-154 a little more IMO.
