Totoro - I live about an hour from some astonishing peach country, so fruit ice cream, tarts, cobblers, and crisps are near and dear to my heart. It's painful seeing people use whole frozen pies when they could buy real fruit at the farmer's market.
I'm not too proud to admit I use frozen pie crust, though. Betty Crocker is almost as good at it as I am and doesn't need hours of work.

Totally with you on the crust. Home made crust is great but takes more time than I have these days so Betty Crocker is my co-pilot when baking pies.

I think i have come back to admire that pie about 20 times over now heh... I may have to put some of my fall foraging to better use and make a rhubarb pie, or a wild low bush alpine blueberry, red huckleberry and blue huckleberry pie
and share some pics. Im thinking that will be this weekends task

I sure miss my Grandmother. She could really do up an apple pie to die for. On top of all her other culinary delights.

Hats off to ya pardner! The pie looks good. Some people insist on working pie dough like bread...but you clearly didn't overwork the stuff. It looks fantastic.

Man I wish I had some of that pie right now.
Made a shrimp and veg soup, ceviche and smoked marlin tostadas today for a little celebration. Need to start taking photos again.
