Another breadknife question

Thu May 01, 2014 6:51 am

The normal "go to" bread knife suggestions are the Artifex and Tojiro ITK.

My question is this. Now that the Henckels Four Star breadknife is on clearance at the same price point, would that be added to the above list?

If not I would be curious at to why and if so would it be then be the preferred choice or one of three similiar quality knives with minor differences?

Thanks

Mike

I've used the Henckels Four Star and it's not on par. The design (or perhaps lack thereof) limits it and it can't move through product as cleanly. The teeth don't augment the cut as well and there's no sweep to the blade. It's also a shorter knife, not quite long enough for torting a cake. All in all, it's a match for a Victorinox, which is much less expensive even with the sale. A Tojiro ITK, Artifex, or the ur-breadknife the Mac Superior make it look silly.

Yeah the shape is functionally obsolete. It works but having the big curve is so much nicer to use that I don't pick up my German bread knife anymore.

I recently bought tojiro bread knife to replace my old short angled messermeister bread knife, the design, length, and performance is far superior :-)
