I am looking for:
240mm Gyuto style
Stainless or clad stainless (for my better half who does not always take care to clean and dry right away)
Best sharpness possible
Ease of sharpening
Western handle (for my better half)
I have a lovely 210mm Laser (a tad short for my knuckles) and a super 270mm that my wife is afraid to use, so I am looking to fill in the sweet spot with a knife she will use but I will also enjoy.

The Goko 240mm and Hiromoto AS 240mm both come to mind for Western handles, carbon clad with stainless. Besides carbon steels, AEB-L is pretty easy to sharpen up and holds a great edge, so I would also look at the Artifex series as well as the Sakai Takayuki Grand Chef series.

Thanks for the help.
The Goko does not have a Western handle, and the Hiromoto is OOS.
Any other suggestions?

The Kikuichi TKC comes to mind as well as the Hiromoto AS, but both are currently OOS.
The Shaun Fernandez knife perhaps....but he's never sent me one to look at so I'm not sure what it's like. Yes, that's a damn near perfect arrow shot towards Louisiana.

Adam, tell me a bit about your custom 240mm listed.
Interested in more information on the steel used, reactivity, and the geometry. Expensive knife, but I like buying things once.
