Akifusa vs. Kagayaki carbonext (240mm gyuto)

Sun Dec 30, 2012 9:24 pm

So these are the 2 gyutos im looking at to get right now. Was hoping some people here have owned either of these and what your thoughts on them are? Do you prefer one over the other? I kinda want both them, lol. Anyway's, some thoughts and input would be helpful in making my final decision. Thank's!

At one point, I owned both, but I only have the Akifusa now. In every area but price, the Akifusa wins, hands down.

+1

I also had both & agree wholeheartedly - it takes a really mean knife to oust the Akifusa.

Ok, so forget about the carbonext. My big draw to that one was the price. Anyway's, the akifusa is in the running still, would like to know what ya'll think of it compared to the Hiromoto AS?

I like the Hiromoto for "workhorse" reasons, and that my big draw to it. As well as it's reputation. Im a bit more unfamiliar with the akifusa but am told it's more of a "laser" than the AS. But does it perform as a "workhorse" as well?

I really want just one kick ass knife to be my go to item. Thoughts please!

I also owned the Hiromoto AS - a real beaut.

However two different knives which you cannot really compare as one is stainless (SRS-15) and the other carbon (AS).

For toughness, edge retention geometry (laser like but not quite as thin) and stainless (maintenance), the Akifusa IMHO wins this race.

The Akifusa will take anything you can throw at it.

The Hiro takes a slightly (hardly notable) keener edge, but looses it very rapidly when prepping acidic foodstuffs.

It is also not as tough and is somewhat prone to micro chipping.

My recommendation - go Akifusa.

Are you confusing Akifusa with Aritsugu?

But to answer your question, yes, it is.
