Advice on 2 knives

I'd like to get my best man and groomsman knives as gifts. We're all trained cooks/chefs, but don't own Japanese knives.

Best man:
1. Are you right handed? He is left handed
2. What type of knife are you interested in (gyuto, nakiri etc..) 210 Gyuto
3. What size knife are you looking for? 210
4. Do you prefer carbon or stainless steel? either is fine, I thought carbon might be interesting as he doesn't currently own one
5. Do you prefer a western handle or a Japanese handle? Either is fine
6. How much did you want to spend? ~200
7. Do you know how to sharpen? We'll need to get into the videos, it's been a while

Two ushers, both the same knife:
1. Are you right handed? Both are

6. How much did you want to spend? 150
7. Do you know how to sharpen? We'll need to get into the videos, it's been a while

If there are great deals on quality knives that cost less than above that allow me to include sharpening kits that would be a plus.

Judging purely by all of the hue and cry on this forum, this would be a good place to start:

If the wedding is more distant you may want to wait on the Kohetsu HAP40 series. Have them finish sharpened by one of the forum sharpeners and you might not need to relearn sharpening for a long time.

Yes, Kohetsu :) They are that good :) Good F&F, great grinds, awesome edge taking and holding. Lightweight, but still somewhat stiff (doesn't feel too flexy/flimsy), very nice handle, too.

Thanks very much - it's going to be a great party.
The recommendations are perfect for what I'm looking for. Wedding is October 5th so that's probably too soon for an out of stock.

In terms of getting something sharpened by a forum sharpener, how would I go about doing that?
