it's peeling with skin. I use a japan technique: Katsuramuki. For finish a roll them.

This looks very cool and innovating. Can you explain to me this Japanese technique Katsuramuki for me? I am not familiar with it.

I made this pie in a 3 Michelin stars. You can do Katsuramuki with a knife (for me: usuba or Kiritsuke or Sujihikis) or a japanesse machine
