240 vs 270 Kono Fujiyama

Second guessing myself, looking for advice.

270mm white 2 at real length of 265mm
240mm blue 2 at real length of 231

Currently using a 210, feels to short for myself. Do not have access to a knife store, or even civilization for the next week or so.

Worried the 270 will be to long, and the 240 will be to short, what do you guys think

Hard to say without using either one for a while. I like 240s. I've handled and used some 270s, but never long enough to really feel comfortable. And I don't think I really need that extra length.

Are you talking about home or pro use? Are you doing high volumes? I'd guess most home cooks would be fine with a 240, though some might prefer a 270. The extra length might be more important for a pro who has to go through a lot of product every day.

The size of your cutting board also comes into play. One rule of thumb is that the knife should be able to fit comfortably on the board when placed diagonally. Not a hard and fast rule, but something to consider.

If you're freakishly tall like me the ergonomics of a longer blade make sense. Give me a 300 and I'm a Robot-Coupe.

it's really all personal preference. You find an 8" knife to short. Now you need to decide would you prefer a 9" or 10.5"
I would say to stay with the 231mm(9") for now. More versatile and may feel just right. 265mm(10.5") can feel massive if your not used to it. But that's just one mans opinion.

210mm to 270mm is a huge jump:


Not only is it longer, it's wider. The whole blade just feels A LOT larger.

210mm to 240mm is not near the size of blade difference:


That said, I use the 270mm easily, but I still prefer the 240mm length. 210mm feels to short for me. I do use the 210mm, but not when I really want to get some prep work done.
