Hi guys I know this is a broad question but I'm really just looking for people's experiences.. I'm looking for a gyuto with basically great geometry and performance. Don't really have a preference to carbon, stainless or semi, nor a wa or western just pure performance while sharp ( don't really care a heck of a lot about retention either, I like sharpening
) No real price cap on this question either, kinda looking for one more as a last hoora for a bit and indecisive!

or Ginsan series, although I've never used one of them yet.
Other custom makers like Butch Harner will be able to make you an incredible knife, but as far as "production" knives go I think Konosuke has the best gyutos.
I would put the Tanaka Ironwood series up there as well, they are something nice I'll tell you that.

If you love sharpening, perhaps a Misono Swedish is an option. Very easy sharpening, you may easily tweak it to your own wishes. Beyond that, it's an excellent blade, very nice profile, great geometry, thin without being a laser, exceptional F&F at its price point.

- Masamoto KS, if they're still being made; or
- Konosuke HD2 gyuto.
Both, in their own, slightly different ways, are perfect knives. You can spend more on prestige, appearance, and exotic alloys, but you can't get knives which will cut onions better.

Thanks for the responses guys! I am intrigued with the butch harner knife haven't ever done much research but coming from you makes me want to give it a shot. I agree with the konosuke recomendations I sadly already own to many ( is there such a thing?!) but was eyeing the zdp form.. Anyone have any input on zdp? I assume the konosuke has the same great grind.

What, seriously? Why?
ZDP is a nice stainless steel along the lines of Cowry-X. It's exceedingly overpriced....but if money is no object it's certainly not going to be a bad knife.

Mad Rookie spoke very highly of his ZDP Konosuke. I'd dare to say it's going to perform just like the honyaki, without the mirror finish of course.
