I'm looking into a 210mm petty. Id prefer a konosuke HD/hd 2 but I can't find em in stock anywhere. Any other recommendations? I prefer wa handle and semi stainless

Organik - you should give a hard look at the Richmond AEB-L Laser 210 Petty: http://www.chefknivestogo.com/rila21pe.html. It's probably the next closest thing to the Kono HD2 on CKTG. The AEB-L steel is not HD2, but it's still a really good steel that has nice all around properties.

If you're in a home cooking environment, I think AEB-L would do everything you ask of it.

If you're in a pro environment, AEB-L is really nice to sharpen.

will the white #2 rust really easily? i have a yamashin santoku that rusts almost instantly. i am considering the richmond but i already have 2 richmond knives i'd like to try another maker if possible even though my richmonds are amazing

Kono White #2 will need basic care like most carbons but will not rust nearly as fast as the yamashin white#1. It's not horrible reactive like some other carbons. I have never had rust problems with my kono white #2 suji and I don't obsess while using it.

Yamashin is iron clad most likely....which rusts crazy fast.
