Sorry to say I will be returning the Artifex Wa-Gyuto, I purchased it as a backup to leave at my girlfriends house but her counters and board are so small a 240 wa is unwieldy, funny thing is my 240 Hiromoto seems fine. I was impressed by the Artifex, especially at it's price point. Is there a 210mm version coming? I think that would be perfect. If not, is there another 210mm stainless wa-gyuto for around $100-150 that you would recommend?

Yes in fact we just got a similar knife from Kaneshige (Konosuke) and it's really nice and inexpensive too. One of the better low cost wa-gyutos at the lower end that we've ever gotten. I love it. I'm also talking to Fujiwara about doing a 210 but I have not worked out a deal yet. If it happens it will be several months.
