Hey Mark,
I am in the market for a 210 petty to use as a "line knife" in a pro kitchen. Currently looking at Konosuke Fujiyama Blue #2 and White #1 and the Takeda petty on close out. Most of my knifes are white steel and I really like it, but I have never tried blue. With the Konosukes are there any differences in thickness or blade profile between the white and blue. Also there thickness and profile compared to the Takeda. Do you think Konosuke does better work with one type of steel over the other? Any info you could give me about the differences between these three knifes would be great, or any other knives that could work as a line knife.

I don't think I could say Konosuke does better with one steel over the other. Everything I've tried from them was great.

Without overlaying them, I don't believe any of the Kono pett's have different profiles, but Mark could answer for sure with what he has in stock.

Never seen one of Takeda's petty's, so can't compare them....sorry.

Also, any idea when you might be getting the Kono Blue 2 Petty 210 in?

never tried white steel before but i do have a blue steel santoku. i've only had a 1095 carbon steel old hickory to compare my blue steel to, which would be unfair since my old hickory is a fair bit softer in terms of hardness.

i do love my blue steel, and yes it does chip if you're not careful.
