Hello,

I am looking for a new knife and was wondering if you can recommend a knife that fits ALL the requirements:

1. Gyuto in Stainless Steel preferrably not VG10.

2. WA Octagonal Handle that is made of Stabilised Wood or pakkawood/micarta. Do not want unstabilised material on the handle.

3. 210mm and "Laser" type blade.

4. Preferrably less than $300.

If you want a wa handle of stabilized or pakkawood your going to have to go with a custom handle. The Japanese do not put that much value in a handle. Several handle makers to be found in the sub-forum or Mark can have it done for you.

I don't know of a pakka wood wa handle on a knife....could be out there though I reckon.

And to get a stabilized handle, I'm with Jeff, that's really only going to come in the form of a custom handle.

However, any of the rosewood handles (ebony, rosewood, etc.) are as good as stabilized and many of the Japanese makers sell upgraded handles on their knives. Maybe a different option.

I did a few handles in Pakkawood in the Wa pattern a while back, not a big deal, but the handle material is somewhat soft feeling sometimes. Many ferrules (Masakage Yuki for one) use Pakkawood/Dymondwood. Some places use black pakkawood "ebony" ferrules and pass it off as a real ebony handle because it has the ebony color. Pakkawood/dymondwood is basically pieces of Birch that they dye and resin together with heat and pressure to make the handle colorful and more dense. Even though it is stabilized, it can still swell/crack/move, just not as much as untreated wood. If you want a stabilized wa handle, get a real stabilized one. The dense woods like ironwood, cocobolo, rosewoods, etc are very very stable, but can still move or crack more than stabilized wood. I've even had stabilized Koa shrink slightly after a year or so!

Most stabilized wood handles I do are around $110 or a bit more, depending on material costs and includes installation and return CONUS shipping. Micarta is a bit less expensive, but it harder to work with grinding wise than dymondwood/most stabilized woods and can be fairly heavy and has limited color options.

Would you really call this a "laser," Jeff? My impression is that this was pretty far from a laser in geometry and performance, even just behind the edge, although I have never used one myself.
