Well, in the last set of criteria he listed stainless clad, so I had to jump on the Goko. lol

Daniel - for me, a Wa handle was super easy to accommodate. I like the blade forward balance point of most Wa Gyutos. You mentioned the Goko 210 - that would be a super knife. Very good value, great steel, nice geometry & profile, easier maintenance, nice rustic finish, great performer, easy to sharpen, etc.

Very good point about the wa handles. Due to their construction they are lighter and tend to put the balance point more towards the tip of the blade (maybe around 2" or so forward of the handle) as opposed to being around the bolster on a western handle. That should allow for better chopping ability (if you chop with a racket grip) and great nimbleness in a pinch grip. I'm not sure the added chopping power is a benefit for pinch grips as you are pretty much holding it at the center mass, but I doubt with the grind there would be any issues. lol
