210 gyuto

Tue Aug 07, 2012 6:30 pm

I have my mind set on the moritaka 210 blue#2 gyuto
but while I wait for its arrival I thought Id look over other possibilities.

Im looking for a 210mm gyuto with:
* forward balance
* not too light (over 4oz)
* can hold its edge for a good time (doesnt have to be crazy long)
* more of a push cut profile
* wa handle very much desired (unless theres a yo handle knife w/ forward balance)
* carbon desired but not required
* not too fragile

I should have the 210s back in stock soon.

We're working with Shigeki Tanaka on a blue steel 210mm kurouchi wa gyuto that will be a smash hit if we can get the pricing right. Hopefully we'll have them this fall.

I have a couple other knives in the works that will fit your needs as well. Takayuki is going to offer us a kurouchi white #1 or #2 series that will be much nicer (and more expensive) than the Tojiro ITK line. We also have a couple unique 210 wa-gyutos coming from very small makers that should be interesting.

Jmbullman: thanks alot for you efforts but a light knife w/ a yo handle isnt what Im feeling at the moment.
Looks nice though!

Mark: I would be willing to wait if those knives coming in does meet the needs Ive been looking for and under $190.
Id hate to get the moritaka and find a similar knife that I desire to get later in life.
