Dude on my right, Eros, was far from intense... little Brazilian back-waiter. German guy on my left, George, was a Captain... he went on to run Banquets for Mar-a-Lago, the old Marjorie Merriweather Post (then Mrs. E.F. Hutton) Estate on Palm Beach Island. Lady to his left, Christian, was proprietor of The Blue Dolphin in Boynton Beach, FL and managed at Auberge Le Grillon... a French Bistro on the Delray/Boca line.

SALTY <> It was a multiple outlet catering for the Boca Symphonic Pops season opener at the Florida Atlantic University. I remember setting up (5) six foot tables with the pictured ice train adorned with shrimp cocktail, shucked oysters mignonette, and canapes... probably smoked salmon/caviar. I helped the ice guy move the train's cars, and then I set up the food & decorated the tables palm fronds, ferns, & shit. Then it was smile, shuck (w/only a bucket for water supply :evil: ), & reload for the hundreds rolling in & out of the Auditorium.

Congrats...I wish I had as much skills as you do...I'm getting a start very late in the culinary field. This particular line of work seems well suited to manic, insane types such as myself.

What is your work knife? Obviously you have a few, but do you use cheapo stamped knives for work and high end for pleasure?
