Most of us don't actually remember the 1977 article, but know it thru Chad Ward's An Edge in the Kitchen.

I remember reading it a while back and he did the oil/water/dry test and said the dry produced a better edge and less scratch from the left over swarf. Peace jmbullman

I tried touch up two knives with my hard white and hard black today. one knife is a stainless sabatier that other a vg10. my two observations are that the edges from ark stones are very toothy and also the stone becomes way more grabby with more pressure than waterstones (I guess due to ark stone don't break down as much).

I clapped when u used vg 10 with the arky's usually anything over 59-60 they won't touch but I have good results with the stainless Sab going up to the surgical black and light I mean very light pressure with vg 10 on a black or translucent usuall I just go up to the water stones on vg 10'dont get me wrong it will work but you will have to work a lot longer with vg10 on arky's. Cudos to u sir. If it passes the tomato test which is the ultimate test as far as I am concerned because a tomato won't lie than way to go but if it tore the flesh break out the whetstones.
