190mm Takeda Miorishi, very sharp knife

check out my Takeda. This is a very solid knife and extreemly sharp.

I have had one of these for about six years. Really love it, except.....

After you have used it and sharpened it a few times, you realize it needs to be thinned. Not easy to do on a short, narrow knife. My suggestion is to begin thinning now, before it builds up on you.

Ps perfect knife for disjointing a roasted chicken!
