180-210mm Petty

Mon May 14, 2012 12:09 pm

I'm considering picking up a longer petty and was hoping to get some suggestions. Right now I'm strongly considering the Konosuke HD series because I love the HD Suji I have, but haven't seen too many other options. Any recommendations?

Chef Knives to Go has a custom Murray Carter 210mm petty for sale. Given the custom handle, it is a very reasonable price. You may also consider the Kanehiro 210mm gyuto, which would probably be a little more versatile.

Hi Andrew,
Here are a couple that might work for you on the line:

Konosuke Stainless 210 petty: http://www.chefknivestogo.com/konosuke11.html

The Suisin petty is more but also a good option: http://www.chefknivestogo.com/suisinpetty.html

Hi Andrew:

Get the Konosuke 210 petty from Mark. I purchase a 240mm suji from Mark last week and the suji is just awesome. It is light and wicked sharp and the spine and choil are rounded. You won't be disappointed with Konosuke knives.
