Lepus...they are Oxo quality steel. He got them from Sysco foods...apparently they had knives for sale to. I've gotten a 3$ thrift store knife sharp as any...it just happens to be a carbon steel forgecraft. I love that little knife it soft enough steel to use for bone snapping.

I don't get paid to do it Madrookie. I do it out of hobby and hope to learn to refine my technique...which is getting better but I still struggle a bit with knowing when to quit.
