$100 budget. Santoku or Chef?

Hello

I am writing to see if you might be able to recommend a knife for purchase. I am looking for a Santoku/Chef knife as a gift. I'd like to spend around $100 as the use will be pretty casual. I think durability vs. absolute sharpness would be more important as sharpening will be periodic at best. Appearance is also important - certainly value placed in craftsmanship/uniqueness. Thanks a bunch

I feel Mark hit the nail on the head with his recommendation. Hard pressed to find a more unique knife that fits your budget and needs in the steel.

This knife has better steel and will hold an edge better but doesn't have the "bling" factor of Mark's recommendation.

I would advice VG-10 to an experienced sharpener only. Aogami Super sharpens very easily.
