Great video! My biggest breakthrough in sharpening occurred when I started taking the time to get my 1K edges properly deburred and shaving -- wish I'd known a lot earlier to be shooting for that!

I have been experimenting with a refined #600 edge on my gyutos of late - I must say that it presents a totally new cutting experience in the kitchen.....one which I actually enjoy...
